I spent an hour in the night two days back making this San Sebastian Cheesecake for the umpteenth time because apparently the cheesecake my brother ordered wasn’t cheesecaking enough for our tastebuds. 😭

I did hear a few nagging complaints about him having to wait for me to click my 268th picture before he could get his slice, but I assure you, the wait was worth it. Especially when it’s my San Sebastian paired with something other than the usual classic milk chocolate.

This sauce takes an effort to make but man, oh man, does the pairing work sooo well. Rich, creamy, delicious and cloudy sweet, with that little tartness cutting through all that richness. I think I’ve officially reached the point where I’ve stopped preferring chocolate with cheesecake altogether whixh is saying something because I am very much a classic person.

And the ultimate seal of approval? The baby gobbled it down in a few bites, and I didn’t even have to worry about whether the ingredients were safe for him because they were. 🥹♥️

Also, despite making the whole cheesecake, it somehow wasn’t really enough to be shared with anyone else because apparently limited home baked dessert does not survive the hoard of my siblings. There is a very real risk of being outnumbered when cake is involved. 😭

So yes, I guess all those repeated cheesecakes were actually research that never made it past the door.

I did save myself one small slice, which ultimately ended up in my brother’s stomach anyway because apparently I will fight him for my slice, protect it from everyone, make it very clear that this one is MINE, and then somehow still end up sharing most of it with him and the baby anyway. What does that even mean about me? 😭♥️
