Bought too much cabbage... Did another version of the Dirty cabbage dish with different veggies and ground chicken instead of ground beef. Im absolutely loving this dish .. high protein low carb low fat

• 𝗖𝗮𝗻𝗱𝗹𝗲𝗻𝘂𝘁𝘀 (Kemiri) – toasted
• 𝗦𝗵𝗮𝗹𝗹𝗼𝘁𝘀 (Bawang merah)
• 𝗚𝗮𝗿𝗹𝗶𝗰 (Bawang putih)
• 𝗖𝗼𝗿𝗶𝗮𝗻𝗱𝗲𝗿 𝘀𝗲𝗲𝗱𝘀 (Ketumbar)

• 𝗚𝗮𝗹𝗮𝗻𝗴𝗮𝗹 (Lengkuas) – bruised

🍳 𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
① 𝗠𝗮𝗸𝗲 𝘁𝗵𝗲 𝗦𝗽𝗶𝗰𝗲 𝗣𝗮𝘀𝘁𝗲
Dry-toast the candlenuts until lightly charred. Blend the candlenuts, shallots, garlic, coriander seeds, and a splash of water until smooth.
② 𝗔𝘀𝘀𝗲𝗺𝗯𝗹𝗲 𝘁𝗵𝗲 𝗣𝗼𝘁
Place the young jackfruit in a large pot. Add lemongrass, galangal, spice paste, bay leaves, chicken, coconut milk, palm sugar, salt, and chicken stock. Mix gently.
③ 𝗔𝗱𝗱 𝗧𝗲𝗮𝗸 𝗟𝗲𝗮𝘃𝗲𝘀
Cover the surface with teak leaves. They give Gudeg its beautiful 𝗱𝗮𝗿𝗸 𝗿𝗲𝗱𝗱𝗶𝘀𝗵-𝗯𝗿𝗼𝘄𝗻 𝗰𝗼𝗹𝗼𝗿.
④ 𝗔𝗱𝗱 𝘁𝗵𝗲 𝗘𝗴𝗴𝘀
Bring to a gentle simmer. Add the peeled hard-boiled eggs and push them slightly into the liquid.
⑤ 𝗦𝗹𝗼𝘄 𝗖𝗼𝗼𝗸
Cover and cook over 𝗹𝗼𝘄 𝗵𝗲𝗮𝘁 𝗳𝗼𝗿 𝟯 𝗵𝗼𝘂𝗿𝘀, or until the jackfruit is tender, dark brown, and most of the liquid has reduced.
⑥ 𝗦𝗲𝗿𝘃𝗲 & 𝗘𝗻𝗷𝗼𝘆
Remove the teak leaves and bay leaves.
Serve warm with:
